My partner and I just moved in together and have been missing a few key items that help to bring joy to my life. I love to bake and we didn't have an electric mixer. But thanks to my partners parents disinterest in baking, they have passed on their mixer to us! CELEBRATE!!! HOLIDAY!! CELEBRATE!! Ok, that's enough singing. This chocolate cake recipe from Frankie Magazine's "Afternoon Tea" cookbook is so simple and so delicious. Since starting my journey of owning less and spending less I have been searching for simple recipes. This one takes the cake (see what I did there?). Give it a go!
Ingredients
125g butter
1 cup self-raising flour
1/3 cup cocoa powder
1 cup sugar
2 eggs, lightly beaten
1/2 cup milk
1/2 teaspoon vanilla essence
Method
Preheat oven to 180 degress celsius
Place butter in a saucepan and melt over heat. Sift flour and cocoa together into a mixing bowl. Add sugar and the lightly beaten eggs, milk, vanilla and melted butter. Stir to combine. Using a wooden spoon or electric mixer, beat hard for three minutes until cake batter changes colour slightly.
Grease and line the bottom of cake tin. Pour mixture into tin. Bake for 30 to 40 minutes or until a skewer inserted into the centre of the cake comes out clean.
Enjoy!
